Sel Roti and Aloo dum Recipe

Ingredients Required

  • Rice
  • Fennel seeds
  • Cardamom
  • Oil
  • Water


  • Soak the rice for over an hour in water
  • Throw away the excess water and pulverise the soaked rice into powder
  • Grind the fennel seeds and cardamom into fine powder (optional)
  • Mix the rice powder, fennel seeds and cardamom
  • Add some water and mix it thoroughly till it gets a paste-like consistency, fluid enough to go in the pan without clogging and yet adhered enough to not distort in the middle
  • Heat some oil (refined oil preferably) in a heavy bottomed pan
  • After the oil is heated enough, add the paste from above making a circle or a spiral (the shape you prefer). You can also use a piping bag instead of your hand.
  • Deep fry it until it becomes brown, turn the other side using a wooden stick
  • Take it out from the pan with the stick and dab the extra oil using a kitchen towel
1. Pulverise the soaked rice into powder
2. Make a paste of cardamom, fennel seeds and rice powder
3. Put it in the pan according to the preferred shape and toss it with a stick. Deep fry till it is brown on both the sides

Aloo dum

It is basically a potato dish which goes with just about anything from rice to roti. Sel roti, however goes best with this kind oof potato.

Ingredients Required

  • Potato
  • Onion
  • Garlic
  • Dried red chillies
  • Red chilli powder
  • Tomato (optional)
  • Salt
  • Black sesame seeds


  • Boil some potatoes and peel it off
  • Make a paste of onion, garlic, dried red chillies (soaked for about 10 minutes in warm water), tomato and red chilli powder
  • Heat a pan with oil
  • After the oil is sufficiently heated, add the black sesame seeds (it will start popping as soon as you put it if the oil is adequately heated)
  • Add the spicy paste  in lower flame and keep on stirring for 3-4 minutes
  • Then add the boiled potatoes cut in the shape of almost a cube
  • Add salt according to the preference
  • Stir properly and cook for about 5 minutes
1. Boil the potatoes and cut into cubes
2. Make a paste of onion, garlic, soaked dried red chillies, tomato and red chilly powder
3. Stir everything and cook for 5 minutes
