Chili recipe (Mexican style)

Ingredients

  • Tomato (puree)
  • Vinegar
  • Sugar
  • Red kidney beans
  • Cumin powder
  • Salt
  • Jalapeno (capsicum or bell pepper can be used)
  • Tofu/ paneer
  • Chilly
  • Olive oil
  • Cheddar cheese

Steps

  • You can used a canned tomato puree or make it at home with fresh tomatoes
  • Boil some kidney beans until they are cooked (pressure cooker is better) *overnight soaked kidney beans are better
  • Add little olive oil in a heavy bottomed utensil
  • After the oil is heated, add some chilly, tomato puree and capsicum or jalapeno and cumin powder and let it cook for few minutes
  • Stir well and let it blend
  • Add the kidney beans after sometime and stir properly
  • Then add some grated/ crushed tofu or paneer and stir properly and let it cook for few minutes
  • Lastly, top it up with grated cheddar cheese
